  • After making the 9,328 mile journey home from South Africa (which took 4 flights and 39 hours) I wanted to sleep in my own bed and eat healthy, clean food. I’ve had more than enough sugar, and chocolate. 🍽 First thing this morning I went to Pilates and then to the grocery store. I was craving greens and good old chicken salad. So this was my lunch: buffalo chicken salad over arugula with cucumber, carrots, tomato, radishes, avocado and topped with @nocrumbsleft marinated onions. I made it with bacon, mushrooms, shallot and spinach but you could substitute sausage for the bacon and use any combination of vegetables that you have on hand. The addition of the nutritional yeast gives it a nice cheesy taste, but if you’re not doing a Whole30, you could always add a little cheese. Omit the bacon/sausage for an easy vegetarian/vegan version.
