Traditional cacio e pepe is an Italian staple, but have you ever tried it with zoodles (aka zucchini noodles)? This No Cook Zoodle Cacio e Pepe is light, packed with flavor, and you only need a four ingredients: zucchini, parmesan cheese, olive oil and salt/pepper. It literally couldn’t be any easier, especially in the middle of summer when you don’t want to turn on the stove and your garden is overflowing with zucchini.

Serve Zoodle Cacio e Pepe as a main course, a side dish, or even as a salad. And, of course, you can always add additional toppings to fancy it up. Roasted tomatoes and basil would be divine. So would sauteed garlicy shrimp, chicken or salmon.

This recipe is vegetarian, sugar-free, gluten-free, and keto. If you omit the cheese, you can make a vegan, paleo or Whole30 version. And you can make it in about 10 minutes.

My Favorite Spiralizer

There are lots of spiralizers on the market, but my favorite is The Inspiralizer® because:

  • It clamps to the counter, so it doesn’t slide around.
  • The Inspiralizer comes with 4 separate blade shapes, changed with The Noodle Twister, a green knob on the side of the tool. These shapes create ribbon noodles, fettuccine, linguine and spaghetti-shaped noodles. You simply change the blades by turning the dial. No separate pieces to keep track of (or lose).
  • Woman owned business. If you’re not following Ali on social media https://www.instagram.com/theinspiralizer/ , you should.
  • The handle comes unassembled and can be assembled for either RIGHT or LEFT handed users.
  • They have a gazillion recipes and how-to videos on their web site.
  • It’s only $34.95. You can buy it directly from Inspiralized or at WalMart or HSN. Use code NEWSITE for 15% off.
