Homemade Rotisserie Chicken in the Air Fryer

Description

My trips to the grocery store ALWAYS include buying a rotisserie chicken because it’s the basis for so many easy meals. That’s why I was thrilled when I figured out how make homemade rotisserie chicken in my air fryer. Here’s a foolproof way to cook chicken using the Ninja Foodi – it’s is a pressure cooker and an air fryer combined. You’ve gotta try it!


Ingredients

  • one whole bone-in chicken, 6 – 7 lbs
  • 1/4 cup lemon juice (approx 2 lemons)
  • 1/2 cup hot water
  • 1/4 cup honey
  • 1 tablespoon whole peppercorns
  • 510 sprigs of fresh thyme
  • 5 cloves garlic, smashed
  • olive or avocado oil
  • salt & pepper

Instructions

  1. In a measuring cup, mix together the juice of 2 lemons, hot water, honey, whole peppercorns and 5 cloves of smashed garlic. Add to bottom of pressure cooker along with some sprigs of fresh thyme.
  2. Place whole chicken (seasoned with salt & pepper) in the Cook & Crisp basket. Seal the pressure cooker and cook on high for 40 minutes. Quick release the pressure when the cycle is complete.
  3. Lightly brush or spray the chicken with oil.
  4. Switch to the crisping lid and use the Air Crisp function at 400F for 15 minutes.
  5. Use a meat thermometer to ensure that your chicken is 165F.
  6. Let chicken rest for 10 minutes before carving and serving
