Like a tropical vacation in a glass, piña coladas can be decadent and high-calorie. But don’t cut yourself off — skip the sugary mixes, break out the blender and try this cleaner and slimmed-down healthy collagen piña colada recipe. Or omit the rum and turn it into a healthy pina colada smoothie or mocktail.
- 1 cup cup frozen pineapple
- 1 cup coconut milk
- 2 scoops collagen peptides or vanilla collagen
- 4–6 ounces of light rum or pineapple rum
- 1 cup ice cubes
- (optional) 2 small pieces fresh or frozen coconut. I like this one from Trader Joes.
Place all ingredients in blender or food processor and blend until smooth and creamy.
For mocktail or a smoothie, omit the rum. You could also pour the mixture into popsicle molds and eat it for dessert. I like this frozen coconut from Trader Joes. It’s just 100% coconut with nothing else added.
